3 cups All Purpose flour, 1/4 cup granulated sugar (you can definitely use monk fruit or sugar substitute), 1.5 tbs baking powder, pinch of salt, 3 large eggs, 2 1/4 cup buttermilk, 1 cup whole milk, 1/2 tsp vanilla, 1/4 melted butter.
Whisk until smooth, Combine wet ingredients with dry ingredients stirring gently as not to overwork the batter. (I prepared on my griddle). I used a half cup measuring cup per pancake batter over medium to medium high heat until golden brown, 1.5-2 minutes on each side.
Serve with a pat of butter and warm syrup of your choice.
